Carrot Banana Muffins

Serves: 12 muffins

1 ½ cups all-purpose flour

½ cup packed dark brown sugar

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon ground nutmeg

½ teaspoon cinnamon

½ teaspoon salt

1 cup old-fashioned rolled oats

½ cup raisins

3 tablespoons extra-virgin olive oil

1 large egg

1/3 cup skim or 2% milk

4 medium carrots, shredded

¾ cup chopped walnuts

1 medium ripe banana, mashed

Cooking spray oil


Step 1

Preheat oven to 400°. Coat a 12-cup muffin pan with cooking spray.

Step 2

In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, cinnamon, and salt until well combined. Stir in oats, walnults, and raisins. Combine oil, egg, milk, carrots, and banana in a separate bowl and stir until well blended.

Step 3

Add wet ingredients to dry ingredients and combine well.

Step 4

Fill each muffin cup with 1/2 cup of batter. Bake until a toothpick inserted in center of a muffin comes out clean, 22-25 minutes. Serve muffins warm with butter or at room temperature.
