Dark Chocolate Energy Bites

Ingredients

5 dates

1 cup dried cherries

¼ cup uncooked quinoa

½ cup raw almonds

½ cup walnuts

(or other desired nuts)

2 tablespoons flax seeds

2 tablespoons melted coconut oil

2 tablespoons chocolate protein powder

60% or more cacao dark chocolate bar

Preparation

Step 1

Place nuts in food processor and blend until coarsely chopped. Add above ingredients (except for chocolate bar) one at a time alternating with a little bit of the coconut oil.

Step 2

After all blended together, turn onto clean surface and roll into small balls. Smash each small ball into silicone molds. I use small square silicone tray from Hobby Lobby.

Step 3

Melt chocolate bar in microwave every 30 seconds until melted and smooth. Top each energy bite with melted chocolate. Place in freezer for 30 minutes. Turn silicone tray upside down and push out energy bites.
