Kale Blueberry Salad

The Progress Lady loves to share recipes that are good and healthy! This one is also referred to as "The Brain Salad," as so many of the ingredients are superfoods. Superfoods are nutrient dense which means they are full of antioxidants, minerals, vitamins, amino acids, and essential fatty acids. A great illustration of antioxidants is to think about the little Pac man balls in the Pac man game. Their goal is to eat anything in their way. That's what antioxidants do - they eat up the free radicals roaming in your body. So, it's super-important to eat foods with antioxidants. The salad dressing in this recipe is amazing as it's made out of dark chocolate! Dark chocolate which is 65% or more cacao is when you'll get your nutritional benefits. So enjoy this healthy salad!
