Kale Brain Blueberry Salad

Yield: 6 servings
*Kale Note: There are many varieties of kale. Some are rather tough so try other types to find out what you like the best.
● 8 large leaves of kale (I like Black or Dinosaur Kale) *
● 1 ½ cups fresh blueberries
● ¾ cup dried blueberries
● ½ cup sliced almonds
● ¼ cup dark chocolate chips
● ¼ cup balsamic vinegar
● ¼ cup olive oil
● ¼ teaspoon salt
● 1/8 teaspoon pepper
Rinse and dry kale leaves. Remove from main stem and tear into pieces. Set aside.
Melt chocolate in microwave for 30 seconds and stir. Continue every 30 seconds until melted and smooth.
Toast sliced almonds by placing in skillet over medium heat. Stir occasionally for about 5 minutes to avoid burning.
For dressing: Whisk together balsamic vinegar, olive oil, salt and pepper. Now whisk in melted chocolate.
Add dry & fresh blueberries, and toasted almonds to kale. Toss and drizzle with chocolate vinaigrette dressing. Enjoy!
